Long ago, before the dark industrial age of beer, at least four breweries thrived in the Starved Rock area. Then came the era of mass production, and with it the end of LaSalle County’s traditional lagers and ales.
Now, with the help of surviving recipes from LaSalle County’s legendary breweries, the tradition is on its way back.
Why are we doing this? Maybe because we believe a proud tradition should never be abandoned. Or maybe it’s simply because — to use the words of our brewmaster — beer is awesome.
